I really like De Cecco's pastas and this brand is of better quality than what I buy at my local supermarket. It's enriched and only coarse grain semolina flour is used to preserve the integrity of the gluten and obtain a pasta which is always Al Dente. The dough is also made with cold mountain water which apparently ensures perfect firmness when cooked. This pasta tastes really good and I can see why it's called "angel hair". It is so thin and cooks in just two minutes. Wow, how this saves me time when I'm in a hurry. Already finished one box and purchased another one.
